Dry-farmed is a term which mostly only applies in the New World. It implies that after the grapevines have established themselves, they no longer get any supplemental irrigation from the winery — only what falls from the sky or lives underground. The reason this is a New World thing is that most regions in France prohibit supplemental irrigation anyway.
Dry farming grapes, especially in hot climates like much of California and Australia, leads to smaller berries (grapes) with more concentrated flavors. It is commonly used with Rhone grapes and Zinfandel in California.
